Each November, Seoul Plaza beside City Hall — a few steps from Gwanghwamun Square and Deoksugung — fills with thousands of volunteers who salt, season and mix mountains of napa cabbage to make winter kimchi together. Organised by the Seoul Metropolitan Government and launched in 2014, the festival celebrates kimjang, the communal making and sharing of kimchi that UNESCO inscribed on its Intangible Cultural Heritage list in 2013. The kimchi made here is donated to tens of thousands of households in need, keeping alive kimjang's spirit of sharing. As tradition dictates on kimjang day, the reward for all that work is bossam — warm boiled pork wrapped in a leaf of the freshly made kimchi.
