A hanwoo (Korean beef) specialist in Seocho open since 1977 and in the Michelin Guide Seoul every year since 2017. Its galbitang is a clear, deep short-rib broth seasoned with nothing but sea salt; the lunchtime serving is capped at around 100 bowls and routinely sells out, so come early. Charcoal-grilled hanwoo galbi is the other reason regulars keep coming back.
